The Indigo Duck in Franklin, known for its rich Lowcountry cooking with a French accent, embraces the essential FGT accompaniment, remoulade—a lemony mayonnaise played up here with earthy hits of tarragon—not only for the flavor but also to adhere the dish’s components: plump steamed shrimp and strata of tomatoes, with a crisscross of thick oven-scorched bacon adding even more wallop.
