The “roux” refers to the long-simmered thickener for such classic dishes as chicken Creole and etouffee. But you’ll rue the day you pass up the po’boy sandwich here. At the 10th Street location, all-you-can-order free sides when you dine in (and that includes the spicy-sweet tomato Creole, moist hunks of cornbread, and heavenly, vanilla-soaked bread pudding) are a nice touch.
