Restaurateur Craig Baker’s farm (and sea)-to-table restaurant in the Ambassador building houses tables fashioned from repurposed Brown County red oak, reupholstered church pews, and funky industrial chairs with open backs. It is a fittingly current spread for former Bluebeard chef John Adams’s playful starters and fresh mains, including a burger seared on a custom 800-degree flat plancha grill and roasted halibut with poached radishes. The dining room is light and airy, accompanied by a smaller, cozier bar featuring beer, wine, and nibbles such as fresh oysters.
