The Rosemary Ham sandwich from Joe’s Next Door (111 W. Main St., Carmel, 317-846-8877), the new sandwich takeout counter inside Joe’s Butcher Shop. Meat layered with aged white cheddar, roasted-tomato conserva, and house IPA mustard thick with seeds push the structural limits of an airy stirato roll.
