From the Bistro menu selections at Union 50 (620 N. East St., 317-610-0234): a savory jumble of squash gnocchi tossed with roasted cauliflower, warm Marcona almonds, raisins, and kalettes (a new fusion veggie of Brussels sprouts and kale). A swoop of fennel-ricotta puree pulls all of the flavors together.
Oysters Rockefeller at The Oceanaire Seafood Room (30 S. Meridian St., 317-955-2277), the shells brimming with onion-spiked creamed spinach over plump oyster bellies. A layer of melted cheese seals everything in place.
Savory pulled-pork shoulder fills a housemade torta at Subito (44 Virginia Ave., 317-220-8211), along with lettuce, tomato, and avocado-laced mayo.
The Kentucky Pisco Sour: Copper & King’s Immature Brandy gently shaken with lemon juice and simple syrup, Liberty Street’s (653 Massachusetts Ave., 317-686-6382) entry in the egg-white fray.
Meridian Restaurant & Bar’s (5694 N. Meridian St., 317-466-1111) savory-sweet pork chop, topped with a rich dollop of bacon jam atop a bed of braised red cabbage and roasted potatoes.
