That’s how long it took co-owner Peter George—who pioneered chef-driven fine dining in Indianapolis from the mid-’80s to the early-’00s with Peter’s, Chops, and Bistro 936—to resurface with this snug Herron-Morton spot that puts equal focus on experimentation and execution. Guests pack shoulder-to-shoulder into the dining room while efficient servers bring out plates of chef Braedon Kellner’s precisely flavored creations, and George himself works the room.
