The fettuccine-based 4 Stagoni at Sal’s Famous Pizzeria (1028 E. Main Street, Brownsburg, with multiple Indianapolis-area locations, 317-858-8700). Crushed tomatoes, capers, and artichokes are tossed with grilled shrimp in this hearty house specialty.
Ultra-tender curried goat in a hearty, fragrant sauce at Chin Brothers Burmese restaurant (2318 E. Stop 11 Rd., 317-859-9155).
The aromatic lamb daube with sweet roasted leeks and celeriac purée from the kitchen at Spoke & Steele (123 S. Illinois St., 317-737-1616), now overseen by journeyman chef Greg Hardesty.
