At Indulge, experience an evening at Hotel Carmichael where your night of dining begins with champagne while a four-course meal and dessert is prepared by executive chef, Chris Coorts. With appetizers on hand, as well as photo ops, swag bags, and surprises throughout, this fall’s night of indulgence is one to be remembered.

Cornbread Madeleines with smoked maple butter

Fried cheese arancini with cranberry mostarda

Celery root and apple velouté with pancetta and smoked sunflower oil

Roasted carrot topped with parsnip, arugula, spiced pecans, sorghum vinaigrette, and goat cheese

Intermède

Wild mushroom with sourdough, herbed chèvre, black garlic oil, and radishes

Course III

Duck prosciutto with celeriac puree, apple gremolata, and horseradish cream

Course IV

Coffee rubbed elk with kabocha squash, radicchio, and apples

Dessert

Sweet corn cheesecake with cranberries and blueberries
