Wrappers Delight: A Dumplings Recipe from Miracle

The Carmel restaurant puts an inventive spin on a classic Asian dish.

Former fishers eatery E. Miracle underwent a lot more than a name change last year when the Hwang family moved the Korean spot to a chic dining room in Carmel. The restaurant, now known simply as Miracle, also welcomed a new menu full of modern takes on traditional Asian recipes, like these luscious dumplings infused with earthy flavors.
INGREDIENTS
» 1 package dumpling wrappers
» 2 eggs
» 1/2 pound ground pork
» 1/2 pound ground lamb
» 1 1/2 teaspoons fresh ginger, minced
» 1 teaspoon fresh garlic, minced
» 1 3/4 cup enoki mushrooms, cut into thirds
» 1/2 teaspoon curry powder
» 1 teaspoon ground cumin
» 1/4 teaspoon ground cloves
» 1/2 teaspoon smoked paprika
» 1 teaspoon kosher salt
» 1/2 of a jalapeño
» 1 tablespoon cilantro
» 1/2 cup water
» 1 cup Greek yogurt
» 1/2 cup chopped scallions
» 1/4 teaspoon black pepper
DIRECTIONS
1. In a large skillet, brown the lamb and pork. Drain off half of the fat and set meat aside in a bowl.
2. In the same pan, saute the mushrooms, ginger, and garlic for about 15 seconds on high heat. Then add the lamb and pork back to the pan.
3. Sprinkle in the curry powder, cumin, cloves, paprika, and ½ teaspoon salt and stir to combine the mixture.
4. Whisk the eggs together in a small bowl. Lightly coat the edges of one side of each dumpling skin with egg wash.
5. Next, fill the moistened side of the dumplings with a heaping teaspoon of mix. Fold the wrapper in half, and seal it in the shape of a half-moon.
6. Simmer in boiling water for 4 minutes or until hot.
7. To make the sauce, blend the jalapeño, cilantro, and water in a blender or food processor. Blend this mixture in a bowl with ½ teaspoon of salt, Greek yogurt, scallions, and black pepper.
8. Warm the sauce over medium-low heat for 1 minute. Serve warm dumplings over a swipe of sauce.
