Indy has no shortage of brand-new craft beer options, from the near-eastside’s Flat12 Bierwerks (414 N. Dorman St., 635-2337) to the far-westside’s Three Pints Brewpub (5020 Cambridge Way, Plainfield, 839-1000), which is serving beers from around the state while its own production facility is under construction. We are particularly intrigued by what’s brewing at Triton Brewing Company (5764 Wheeler Rd., 508-3715), with a tasting room that—if construction stays on schedule—opens this summer. Named for the son of the Greek god of the sea, the brewery formulates specific water recipes to work with each type of beer it makes. Stouts are made with water calibrated to match that in Dublin, while the signature Railsplitter IPA is made with water befitting an American brew.
