Traditionally boiled, sprinkled with coarse salt, and presented as a simple meal-starter, the garden-variety soybean comes out of its shell in these three inventive dishes.

Soybeans replace the chickpeas in this smooth cheeseboard dip for crudite and seeded flatbreads. Ground cashews stand in for the traditional sesame-seed tahini, making this a tasty vegan option.
